Cheese Tavern CASCINA, a cheese specialty store in Ebisu, celebrates its 4th anniversary in October 2021.
Starting on October 1, 2021, Cheese Tavern CASCINA’s signature item “Truffle Piave Cheese Carbonara” is upgraded to “Too Much Truffle Piave Cheese Carbonara” using generous portion of truffle.

Staff will make the final touch on your table. First, they bring the cheese to the wagon near your seat and flambé the cheese with spirits to melt it. Then, they put freshly boiled pasta in it and entangle it with cheese. Finally, they add the black pepper, yolk, and truffles to complete.
This is a rich carbonara entwined with cheese that has been aged for a long time and has a concentrated flavor.
They use thick, chewy fresh pasta called “Kitara”. Using durum wheat from Awaji Island, it has a strong flavor and texture that is as strong as cheese, at the same time it’s like whole grain flour. After many tastings, theyt found a pasta that goes with this carbonara.
