What is Robatayaki?
Robatayaki is a time-honored Japanese cooking method where ingredients are grilled over charcoal at an irori (open hearth). This slow grilling process concentrates the flavors of the ingredients, creating a tantalizing aroma and taste.
The Appeal of Kinshamoji
At “Sumibi Robata to Niku Kinshamoji,” the chef carefully selects the freshest seafood, meat, and vegetables, which are expertly grilled by skilled chefs. The fatty tuna collar and the “genshiyaki” (primitive-style grilled) largehead hairtail are recommended. Also, don’t miss the sashimi made with fresh fish directly sourced from the market.
