FOODCLUB, a new style food hall opened in the shopping & dining complex “CROSS GATE KANAZAWA” on August 1.
The owner and chef of a Japanese restaurant with two Michelin stars, and the pastry chef who won the best pastry chef at the world’s most prestigious cuisine award, Gault et Millau will provide the taste of the highest restaurant quality and new enjoyment in four new formats (Japanese soup sushi, sweets & frozen dessert, hashed beef, salad & meat).
FOODCLUB is a state-of-the-art member-only food hall with consideration for the convenience of customers and measures against infectious diseases to provide a next-generation food place. It is operated based on a mobile order + complete cashless + self-service style.
Order and payment can be made on your phone by registering the payment method in advance.
In consideration of the environment, FOODCLUB uses original equipment and cutlery made of materials that are overwhelmingly durable and resistant to dust, and 100% recyclable.

ROKU by ZENIYA
The new business format “Showan-sushi” produced by the Michelin star Japanese restaurant “Zenya” is a free-style sushi in small bowl that anybody can enjoy. It is also good as a side dish of sake.
You can enjoy the taste of carefully selected ingredients such as fresh seafood tuna, seared sardines, and roasted sea urchin roe and sea urchin.
This is “Orchid Zen” (Nodoguro roast and sea urchin, salmon roe, sea urchin, Japanese beef toro and sea urchin, squid figure making, sweet prawns, kohadano vinegar, soup) ¥4,950 (tax included) .
Laboratoire Lʼaube SHOKO HIRASE
The winner of the 2020 Gault&Millau Best Patissier Award, Shoko Hirase is the co-founder of the L’aube, a French restaurant in Higashiazabu, Tokyo, which has won one Michelin star for four consecutive years.
Using the state-of-the-art equipment, she will create a variety of sweets (ice desserts) beyond the imagination, from combining fruits and herbs to sorbets that look like cuisine. And cold desserts with seasonal fruits and flowers will be served on a plate.
This “Millefeuille strawberry banana” ¥1,650 (tax included) is a combination of crispy pie dough, vanilla custard cream, baked banana ice cream and seasonal fruits.

The ultimate hashed beef was developed based on the concept and recipe of Hideaki Imahashi, the owner and chef of L’aube, a French restaurant in Higashi Azabu Tokyo, which won one Michelin star for four consecutive years. Sauce On Sauce is a “egg and butter sauce” provided in Espuma, a smooth mousse form.
And enjoy the harmony with butter rice cooked in soup. Buttery brioche (bread) is an option as well.
Hashed beef ¥1,870 (tax included) is a spice-flavored hashed beef that contains plenty of beef, red wine and vegetables.
Westward Ranch Salad & Meat HOUSE
The 12-item fresh vegetable salad is the main product. They have several house-made original dressings such as the healthy Japanese kombucha and lemon dressing made from fermented tea by chefs who specialize in Japanese cuisine, Italian, Spanish, and American food from “A_RESTAURANT” in Katamachi, Kanazawa.
Topped with carefully selected meat such as bacon and special hamburger made by the traditional German method, the salad can be a main dish of lunch and dinner.
